BLUE ZONE BURGER RECIPE!

My friend recently shared this blue zone burger recipe with me and I have made it a minimum of six times in the past month. That’s how delicious and satisfying it is…I love it on a salad but you can have it on a bun if that makes you happy!

Ingredients
2 lbs ground meat of your choice (I like bison meat)
4 cups baby spinach (loosely packed)
7-8 baby mixed sweet peppers (or 1 large)
1/2 large sweet onion
4 scallions, chopped
4 sprigs parsley
4-6 mint leaves
2 tsp thyme leaves
2 1/2 tsp salt or to taste
1 teaspoon freshly ground black pepper
1/4 cup olive oil ( to cook peppers and onions)
4 slices bread or 1 cup breadcrumbs
olive oil to pan fry (optional)

    I thought this is a vegetarian burger recipe…. people who live in blue zones are mostly likely to be a vegetarian or vegan

    Very good recipe. Only thing I would do differently would be to wilt the spinach with the peppers, so the moisture is at a more controllable level.

    You inspire the chef in us! Making tomorrow, but will be bunning them, mine with Thai chillies of course! I noticed that you didn't cut the stems off the spinach, I cut them off as they are bitter and can be tough, then my daughter feeds them to her rabbit for a treat…
